Ingredients
- 180 g rolled oats
- 2 apples — one grated, one thinly sliced
- 400 ml milk of choice
- 2 eggs
- 2 tbsp maple syrup or honey
- 1 tsp cinnamon · ½ tsp vanilla
- 40 g walnuts, roughly chopped
- Pinch of sea salt · butter or oil for the dish
- Greek yogurt, to serve
Method
- Heat the oven to 180°C (350°F) and butter a medium baking dish.
- Whisk the milk, eggs, maple syrup, cinnamon, vanilla and salt. Stir in the oats, grated apple and most of the walnuts.
- Pour into the dish, arrange the apple slices on top and scatter the remaining walnuts.
- Bake for 32–35 minutes until set and golden at the edges.
- Serve warm with a spoon of yogurt — and refrigerate the rest for the week. Reheats beautifully.
Substitutions
Pears work as well as apples. Dairy-free? Any plant milk and coconut yogurt. Gluten-sensitive? Certified gluten-free oats. Add a handful of raisins if your mornings deserve them.Nutrition notes

Ingredients
- 2 chicken breasts, in large chunks
- 150 g orzo
- 1 leek, sliced · 1 garlic clove
- 500 ml chicken stock
- 1 lemon — zest and juice
- 80 g baby spinach
- 2 tbsp grated parmesan
- Olive oil · sea salt · black pepper
Method
- Season the chicken and brown it in olive oil over medium-high heat, about four minutes. Set aside.
- Soften the leek and garlic in the same pan for three minutes.
- Stir in the orzo and lemon zest, then pour in the stock. Return the chicken and simmer gently for 12–14 minutes, stirring now and then.
- When the orzo is creamy and the chicken cooked through, fold in the spinach, lemon juice and parmesan. Rest two minutes, then serve.
Substitutions
Chicken thighs bring even more flavour. Swap spinach for frozen peas, or orzo for pearl couscous. Dairy-free? Skip the parmesan and finish with extra lemon and herbs.Nutrition notes

Ingredients
- 1 aubergine, in chunks
- 2 red peppers, in strips
- 1 red onion, in wedges
- 3 garlic cloves, unpeeled
- 400 g can chopped tomatoes
- 1 × 400 g can butter beans, drained
- 1 tsp smoked paprika · 1 tsp dried oregano
- Olive oil · sea salt · black pepper
- Fresh parsley and crusty bread, to serve
Method
- Heat the oven to 200°C (390°F). Roast the aubergine, peppers, onion and garlic with olive oil and salt for 35 minutes, until deeply golden.
- Squeeze the roasted garlic from its skins into a wide pan, add the tomatoes, paprika and oregano, and simmer five minutes.
- Fold in the roasted vegetables and butter beans and let everything mellow together for five more minutes.
- Season, shower with parsley, and serve with bread for the sauce — this stew is even better tomorrow.
Substitutions
Courgette or fennel roast happily alongside. Cannellini or chickpeas can stand in for butter beans. A spoon of yogurt on top makes it silkier.Nutrition notes
