Chia & Citrus Morning Pots

Five minutes tonight, a cool layered pot of vanilla chia and bright citrus tomorrow — breakfast that feels like a small spa moment.

Ingredients

  • 6 tbsp chia seeds
  • 400 ml milk of choice
  • 1 tsp vanilla · 1 tbsp honey or maple syrup
  • 100 g Greek yogurt
  • 1 orange, in segments
  • ½ mango, in cubes
  • 2 tbsp toasted flaked almonds
  • Fresh mint, to finish

Method

  1. Whisk the chia, milk, vanilla and honey in a bowl. Wait five minutes, whisk again to break up any clumps, then refrigerate at least four hours or overnight.
  2. In the morning, layer the chia into two glasses with spoonfuls of yogurt.
  3. Crown with orange segments, mango, almonds and a leaf of mint.

Substitutions

Any fruit works — berries in summer, poached pear in winter. Coconut yogurt keeps it dairy-free. For extra protein, stir a scoop of vanilla protein into the milk before the chia.

Sesame-Crusted Salmon with Cucumber Ribbons

Ingredients

  • 2 salmon fillets (about 130 g each)
  • 2 tbsp sesame seeds (white, black, or both)
  • 1 large cucumber, in ribbons
  • 2 spring onions, finely sliced
  • 1 tbsp rice vinegar · 1 tsp sesame oil
  • 1 tsp soy sauce · ½ tsp honey
  • 120 g cooked brown rice or quinoa
  • Olive oil · sea salt

Method

  1. Press the tops of the salmon fillets into the sesame seeds to coat.
  2. Pan-sear in a little olive oil, sesame-side down first, 3–4 minutes per side, until the crust is golden and the centre just blushing.
  3. Whisk the vinegar, sesame oil, soy and honey. Toss the cucumber ribbons and spring onions in half of it.
  4. Plate the rice, then the cucumber, then the salmon. Spoon over the remaining dressing.

Substitutions

Trout is a lovely stand-in. Tamari keeps it gluten-free. Vegetarian? The sesame crust works beautifully on thick slices of pan-seared tofu.

Ingredients

  • 600 g carrots, roughly chopped
  • 1 onion, chopped · 2 garlic cloves
  • Thumb of fresh ginger, grated
  • ½ tsp ground turmeric
  • 1 × 400 g can white beans, drained
  • 800 ml vegetable stock
  • 100 ml coconut milk (optional)
  • 2 tbsp mixed seeds, toasted
  • Olive oil · sea salt · black pepper · lemon

Method

  1. Soften the onion in olive oil for five minutes, then add the garlic, ginger and turmeric for one fragrant minute.
  2. Add the carrots, beans and stock. Simmer 22–25 minutes until the carrots are completely tender.
  3. Blend until silky, stir in the coconut milk if using, and brighten with a squeeze of lemon.
  4. Serve scattered with toasted seeds and a thread of olive oil.

Substitutions

Butternut squash or sweet potato can replace half the carrots. No coconut milk? A spoon of yogurt at the table does the silkening. Chilli flakes welcome.
